Crispy Vegetables

Ingrediants:

  1. Onion
  2. Capsicum
  3. Cauliflower
  4. Potato
  5. Mushroom
  6. Babycorn
  7. Cabbage

Method:

Make a thick batter with 2tblsp maida, 4tblsp cornflour, 1tblsp vinegar,1tblsp chilli sauce,1\2tsp ajinomotto,salt and 1tblsp oil. Dip vegetables in a batter and deep fry.Serve hot.

Mein Chow Soup

Ingredients:

  1. 4 1/2 cups clear vegetable stock or water
  2. 2 tbsp finely chopped tomatoes
  3. 2 tbsp finely chopped capsicum
  4. 2 tbsp finely chopped cauliflower
  5. 2 tbsp finely chopped carrots
  6. 2 tbsp finely chopped cabbage
  7. 1 tbsp fresh mint leaves (phudina) , finely chopped
  8. 1 tbsp chopped coriander (dhania)
  9. 2 tsp finely chopped garlic (lehsun)
  10. 2 tsp chopped ginger (adrak)
  11. 3 tsp soy sauce
  12. 2 tbsp cornflour mixed in 1/2 cup water
  13. 1 tbsp oil
  14. Salt to taste

Method:

1. Heat the oil in a kadhai over a high    flame. Add the garlic, ginger, vegetables and stir-fry for 2 to 3 minutes over a high flame.
2. Add the stock, mint, coriander, soya sauce, salt and pepper.
3. Add the cornflour paste to the soup and boil for 1 minute. Top with the chilli oil and coriander.
4. Serve hot with soy sauce.
